What’s for dinner? This is a question women all over the world ask themselves and are being asked by their hungry loved ones. Today, let’s bring a simple weekday dinner idea from a French family– the omelette (omelet) dinner. An omelette dinner is quick, low calorie, and not expensive. It also has so many variations that it adds many dinner options to your repertoire without feeling déjà vu. You can include a lettuce with your favorite salad dressing (an Art of Home favorite is Newman’s Own Family Italian Recipe) to any omelette dinner. And for dessert, we’ll offer a yogurt.

So let’s get started with the first variation of the “omelette dinner”: the Easy Omelet recipe.
Easy Omelet
INGREDIENTS (4 servings)
- 8 Eggs
- 1-2 TBSP of butter (or Olive Oil)
- 1 TBSP milk
- salt, pepper
Directions
- In a large bowl beat eggs with a fork.
- Add about 1 TBSP milk.
- Add 1 pinch of salt and pepper and mix.
- Heat butter (or olive oil) in nonstick pan under high heat.
- Once the butter is sizzling, pour in the eggs.
- Cook for about 1-2 minutes (you’ll see the eggs firming up on the edge and bottom of the pan.)
- With your wooden spoon, bring the edge of the omelet towards the center to leave room for the uncooked egg mixture to cook.
- Shake the pan to ensure the eggs don’t stick.
- Slide the omelet onto a large plate.
- Cut into portions and serve.
Now let’s talk about dessert — yogurt. Yogurt is a staple dessert for French families on weekdays, especially in the winter when most fruits are out of season. We like Chobani yogurts for the taste, thick texture and good nutritional value but any yogurt would do.
You can play with the flavors to spice things up — plain with your favorite sweetener or flavored (strawberry, peach, vanilla, etc.). I also like to buy yogurt in bucket sizes and serve it in an ice cream bowl or a ramekin to pretty it up. Yogurt is also an excellent source of calcium which is much needed for women and children.
