Today, we are offering a kitchen tip on how to defrost frozen scallops so they taste as if you just brought them back fresh from the fish market! During the scallop fishing season (fall-winter-early spring in France), our cook from the French kitchen load the freezer with fresh scallops from our favorite “poissonnerie” (fish market) at the Farmers maket. Yesterday, we took some out of the freezer to serve sauteed scallops on a bed of julienne vegetables for dinner. We defrosted them using an old-fashion tip used by many scallop lovers. We highly recommend using this technique which gives back their tenderness and freshness to any frozen scallops. Check the Art of the Home tip below and you will enjoy “fresh” scallops year-round!
Art of the Home Tip — place frozen scallops in a bowl and cover them with cold milk (not hot or warm otherwise you may cook them). Cover bowl and allow to defrost in the fridge. You can leave them overnight for the following lunch or in the morning if you are serving the scallops for dinner. Enjoy and bon appétit!
