To stop rice from sticking to the bottom of the pot, remember not to stir too often. It is a bit counterintuitive but too much stirring will cause the rice to stick together and in particular to the bottom of the pot. The reason is that when you mix rice, you are releasing the starch it contains. The starch then dissolves in the water and tends to adhere to the bottom of the pot where it is the hottest. Patience is a virtue when cooking rice (as it is in life!) — so remember, not too much stirring. Et voilà, bon appétit!
